FREQUENTLY ASKED QUESTIONS

Chef LC Cutlery makes every effort to make sure your blades have 'The Educated Edge' as well as educating people on how to care for your equipment once it has been sharpened.  

  • We have recently changed our kitchen staff, can we schedule a consultation?"
    We would be happy to schedule a consultation on-site to determine what knives and equipment you need serviced or suggestions for adding products to your kitchen that would be beneficial to the daily production of your culinary team. For more information please Contact Us.
  • What type of cooking classes do you offer?
    We can arrange for company cooking classes or will be happy to talk with you about group cooking classes that your business would like to schedule. Please Contact us for more information.
  • What if my knives do not fit in the envelope or sleeve?
    If your blade is wider than the safety sleeve, cut open the upper edge of the safety sleeve and, slide the blade in with the sharp edge facing the uncut side of the sleeve. Secure the blade with tape around the entire sleeve and the knife’s blade. If the blade is longer than the safety sleeve, use old newspaper to wrap around the heel of the knife (the part of the blade that is closest to the handle), all secured with adhesive tape. Make sure the tip of the knife is secured against the closed part of the knife guard. We can only accept knives that fit our special knife envelopes that we send you based on the information provided on the forms. The knife envelopes guarantee secure delivery of the knives and is therefore essential. Knives longer than 16 inches: Please Contact us for more information.
  • Is it safe to send my knives in the mail to have you sharpen them?
    Sending knives to have them sharpened through the mail is a very safe process. Once you have placed an order, we will send you our customized envelopes with a safety sleeve for each of your knives. Our envelopes are prepaid and registered. We will send you the tracking information so that you can track the shipment once it leaves your location and our contact information.
  • What if I am not 100% happy with the result?
    LC Cutlery customers are generally very pleased with the quality of our sharpening services. Chef Lee guarantees his work, so if for some reason, you are not happy with our work we will be happy to re-sharpen your knives without charge.
  • Is Sharpening Cheap Knives worth the cost?
    Yes! Cheaper knives are often made of good quality steel. What makes them cheap to produce is that they were originally sharpened by a mechanical device, like a robot, which will never get the results a knife smith can achieve. Popular brands, such as KitchenAid, Cuisinart, Chicago Cutlery and Cephalon will come to you with a sharper edge than it had brand new.
  • What is a rolled edge?
    When a knife stops cutting, the edge is no longer aligned, this can be detected by pushing gently from the back of the blade to the edge using your thumb. One side of the knife will be smooth, and the other side will feel curled or rough. This rough side is the side that is rolled. Learn more about knife sharpening services.
  • How do you keep a knife sharp?
    The secret of keeping your edge is simply use it, clean it and cover it. Putting knives together in one drawer for instance can be abusive to the edges, causing nicks or dulling the edges. An edge will be better maintained by keeping it protected with a cloth or cover of some kind. Cutting nonfood items, such as boxes, bags, string or straps also dull the edge.
  • Are all knives sharpened the same way?
    No! There are no two knives that are identical. Our knifesmith will determine which angle your knife’s blade has to be sharpened. Depending on material of the blade (different metals e.g. Damascus, carbon steel, stainless steel or ceramic), the sharpening – and if necessary grinding process – will be performed on different machines using varying grit belts or wheels. Even the final stropping or polishing will be done according to the type of knife and blade. Chef Lee will determine the type of sharpening that is necessary for your knives to achieve the best result.
  • How do I find a good quality knife?
    We like to match the knife to the scope of job you are using it for. For cutting things like herbs or other small produce we would recommend the 7” fluted Santoku with a leather finish. For larger things we would recommend the 10” Chef Knife with a hollow ground edge. Chef Lee can make suggestions for the type of knife you might consider for your specific cutting needs by contacting us.

    LC Cutlery is a mobile knife sharpening service. A partial list of our service areas is shown below. A full list of service areas will be provided upon request.
